Approaching Girls Passing By While You’re Seated at a Restaurant/Cafe

This is more of a “how to do this in the least socially awkward way” kind of question. Obviously that’s the main issue here, because if you’re seated at a cafe or restaurant, as I often find myself these days, and see a girl walking by outside, it’s simple to just get up and run after her, then do a typical street approach. I’m hesitant to do this too frequently without some kind of strategy or routine in place for not looking crazy.
For some context, I work online, so it’s a no-brainer to just post up at a cafe or an outdoor venue for lunch. Unfortunately I do actually have a lot of work to do so I’m typically planning to be locked in there for a good hour or two before switching up venues.
Approaching girls INSIDE the cafe is one thing, but I tend to notice a lot more opportunities just seeing girls passing by on the street outside, or if I’m seated outdoors, literally walking right past me.

I was wondering if any seasoned veterans have tips on how to not look crazy if I decide to leap up from my seat and chase after a girl (and then return is the key… I can always pack it all up and just make like I’m leaving, although in most cases I’d prefer to leave my things and come back after grabbing her number and/or inviting her in to sit. That besides the fact that it can usually take a minute or two to pack up my things and by then she might have gotten away. Or I might be in the middle of a meal for instance.)

I’m sure I’ve seen this in movies before, but can’t put my finger on a particular scene, like one of those old Connery Bond films or Cary Grant or something where he’s meeting his contact at an outdoor cafe and leaps up to go chase down a pretty passerby.

Any tips on how to make this more fun, interesting, or exciting in a way that will minimize the awkwardness for when I return to my seat/ and/or if she catches me actually leaping up from my lunch lol?
