On a date, if the girl mentioned something that you disagree, do you try to mention why you disagree with her, or do you avoid the topic to prevent creating a bad vibe? For example, if the girl mention that sex is not important for her, do you disagree by saying "Well that's nonsense, sex is important for everyone", or do you just say "I see" and then quickly switch to favorable topic? Or we can probe more into the girl by asking "Why is this so?", to understand more about her and create rapport?

I never disagree 'strongly' because it can kill the vibe and rapport. My response would depend on her question. Some questions demand ignorance with a smirk, few will need probing and for others, you will need you to divert topic to something else.
However, If she asks for my point of view then I give a candid response based on what I think and if I feel that she has been probing me long enough then i quickly change topic and turn focus back to her.

It is OK to disagree, particularly if her opinion is non-conductive to the kind of relationship you are looking to build with her.
If a girl says she never does sex in the first date and you’re not sure you want to go multiple dates, you can say something on the lines of “I used to think that way, but you know? Letting your passions rein free from time to time is such a wonderful experience”.
What you don’t want is to get into arguments where you are trying to convince her or explain where you are coming from.
You plant seeds and see if they grow.
