How To Build Relations During Covid Period

I shall cut the story short, so I met this girl from my interest group, and there were opportunities for us to have dinner together.
Things were looking fine until covid has forced us to stay at home, and outing is out of the possibility.
So we have an online video chat with a group of friends. So before that, she was busy with her examination and now that it has come to the holiday break.

How do I maintain the bond as I can see that she is not putting much effort into the text? I know text portray different idea from a real perspective. Beforehand, I have the habit of not texting it daily as I know this would cause frustration and burn out all possible topics.
All the books I read are for the non-covid situation, and I find it hard to express it through text. I have tremendous experience of girls ghosting or turning it into one-word reply as it has become a hassle to them. I am trying to change my style and would like to know what kind of suggestions would help.

Would video conferencing be a good substitute? How to break it off the group video conferencing to solo conferencing?

I know she is comfortable with me
I get tense up whenever I am about to text her
I get affected if I don't get a reply
Her friend (female) asked me to ask her out for dinner before going for interest group
She is enthusiastic at the start but slowly become one word reply (text)
She has more to say in person
She is close with her friend, so when her friend left the conference, she would as well
What her friend knows, she will know. Not sure if it's because her friend is enthusiastic in sharing it or she was the one asking.
