What are some situations to decide on a second date?

Today I instant-dated a girl and she was super into me but I had to go out shopping with my friend later. So, I didn't escalatea lot. I didn't think it was too much of a big deal to end the date and take her number, until I ended the date and asked her number and she suddenly went cold. When do you guys choose to decide going on a second date?

With the instant date, how long did it last? I find if you’re not going for a same day close, it should be an hour long with some light escalation. Then seed the second date (usually food/ cook a meal together at your place) before grabbing her number.
